PB Coconut Collagen Overnight Oats

If you are anything like me, you love meal prep!  I love setting out some time on Sunday, or another day that I have a few hours, and set myself up for success. Lately, I have been on a real Overnight Oats (ONOs) kick.  It takes minutes to make, you can make a few servings at once, + the options are endless. Today I am sharing a recipe that I tried out this morning and it totally rocked!


Peanut Butter Coconut Collagen ONOs - 1 serving

 

Ingredients:

  • 1/3 cup of Rolled Oats (I like Trader Joes)

  • 2 tablespoons of unsweetened Peanut Butter

  • 2 tablespoons of unsweetened coconut flakes

  • 1/2 - 1 scoop Collagen Peptides (I like Vital Proteins)

  • 1 scoop/packet of Vanilla or Chocolate Protein Powder (I like Sano, use code: IGLIVE for 25% off their website)

  • 1/2 cup unsweetened almond or coconut milk

  • 1 tablespoon of chia seeds

  • 1 tablespoon of flax seeds

 

Directions:

  • Mix all ingredients in a mason jar or leftover nut butter jar.

  • Refrigerate overnight or up to 5 days

  • When ready to eat, stir + microwave for 30 seconds.

  • Option: top with fresh berries or banana

  • Enjoy!

I love prepping two or three of these Overnight Oats at a time + playing around with the flavor combinations. These are great to take on the road or to work.
